  • Consumed for centuries in Japan but still little known in Europe, matcha is a traditional Japanese drink unique in its color, taste, and numerous benefits for physical and mental health.

    Unlike the classic green tea we know, the tea leaves are hand-picked, dried, and ground into a fine green powder. We therefore consume the entire tea leaf and benefit from all its virtues.

  • “Classic” (Muggle) green tea and matcha come from the same plant: Camellia Sinensis.

    However, they are very different in terms of cultivation, harvesting, and consumption.

    Green tea is grown in full sun, while tea leaves for matcha production are shaded for 20 to 30 days before harvest to promote the production of chlorophyll and amino acids, giving matcha its color, taste, and benefits.

    Only young leaves are picked to make good matcha. The stems and veins are then removed and ground into a fine powder. It takes 1 hour to grind 30 grams of quality matcha.

    While we brew our green tea in hot water, matcha doesn't require any infusion. The green powder must be diluted in water.

    We therefore consume the entire tea leaf and benefit from all its virtues. This is why matcha contains 137x more antioxidants than classic green tea.

  • Start by heating water (maximum 80°C).
    Add 1/2 teaspoon (1 to 2g) of matcha tea powder to a bowl and pour in about 60ml of hot water.
    It is important not to use boiling water as it can burn your matcha and make it bitter.

    Using a chasen (traditional bamboo whisk) or an electric whisk, mix your matcha. Start by stirring gently to incorporate the powder into the water, then speed up the movement in an “M” shape until you obtain a light foam.

    In traditional preparation, you can enjoy your matcha with just water.

    For a more indulgent version, you can add about 200ml of your favorite milk, hot or cold. We recommend oat milk :)

  • Yes and no. Poor quality matcha is bitter (the kind you drink at Starbucks, for example). But the high-quality matcha we offer at Chasen Brew doesn't have any bitterness.

    Adding boiling water can also burn the leaves and make them bitter. Be careful not to use water temperatures above 80°C when mixing it with hot water.

    Our grinding method prevents matcha from becoming bitter because we use granite grinding wheels, which prevent the creation of heat, which would otherwise make the matcha bitter.

    To guarantee the best quality matcha, we promise to have it at your home for a maximum of 3 months after being ground.

    We recommend storing matcha in a cool, dry place, such as your refrigerator, and consuming it within 3 months of opening. Beyond this date, its color and flavor may deteriorate.

  • You can find cheap matcha online, but it's often of very poor quality.

    The high-quality matcha we offer at Chasen Brew is more expensive for several reasons:

    Our matcha comes from specialized farmers who have been growing Matcha over a long legacy.

    Our matcha comes only from the first harvest of the year, called "shincha" because the weather conditions are the best for producing quality matcha.

    Tea plants are covered 20 to 30 days before harvest.

    The best leaves are then harvested by hand, respecting the traditional and ancestral know-how of tea masters.

    The stems and veins of the leaves are then carefully removed to keep only the best and avoid bitterness.

    They are then ground using granite millstones (many other brands use stainless steel) and at low speed to avoid the creation of heat which could harm the quality and taste of matcha and to obtain a fine powder.

    It takes us 1 hour to grind 30 grams of high-quality matcha.

    To guarantee the best quality matcha, we promise to have it at your home within 3 months of grinding.
